Okay I know what you are thinking, "brussels sprouts?! Yuck!" But let me tell you, this recipe will have you questioning why you haven't been eating brussels sprouts all this time. The ingredients in this recipe cut the bitter flavor that everyone hates, and the baking process makes them much more palatable than mushy boiled brussels. This recipe is a combination of spicy, sweet, and acidic to make the perfect balance of flavors.
The sauce in this recipe is key, honey for a touch of sweet to cut the bitterness, lime for acidity to bring out the good natural flavors, and a hint of spice for a flavor boost.
The other key for making the perfect brussels is to cut them in half and laying them flat side down to bake. This will brown the face down side and you will get a tasty crispy outside.
After the brussels bake, put them in a serving bowl, then pour over the sauce and mix well.
Ingredients
[Serves 6]
1-2 lbs brussels sprouts cut in half and bad leaves taken off
1 Tbsp oil
Salt to taste (I like to use course salt)
Sauce
3 Tbsp honey or real maple syrup
3 Tbsp lime juice (fresh or concentrate)
1 Tbsp hot sauce (I used Frank's)
Directions
Preheat your oven to 425°.
Wash your brussels sprouts and cut off the end of each, and then cut them in half. Peel off all the bad leaves on the outside. Then place your cut brussels in a large bowl.
Once all are cleaned, add your oil and stir until they are all coated evenly.
Cover a large baking sheet with parchment paper, then lay out all your brussels flat side down (this will make them crispy). Then sprinkle salt to taste over them. You may need to use more than one pan if the pan is too crowded.
Cook for about 30-35 minutes or until top leaves are getting brown and curled (see image above) and they are soft when poked with a fork. Time will depend on the size of your brussels.
While they bake, whisk together all your sauce ingredients and set it aside.
When they are nice and golden, remove them from the oven and add them to a serving dish. Pour over the sauce and stir to coat them evenly.
Serve right away and enjoy this tasty super food!
