Cauliflower is such a versatile vegetable, it pairs well with all sorts of different seasonings and flavors. This garlic parmesan cauliflower is packed full of bold flavor, if you don't already like cauliflower, this recipe will help you learn to love it!



Start by prepping all your fresh ingredients. Chop your cauliflower into florets, chop the parsley fine, and mince the garlic.


Fresh ingredients are great for this recipe, but I actually personally prefer to use frozen cauliflower, dried parsley, and garlic powder. Not only doe it make the prep faster, but I find I prefer the taste. Feel free to choose whichever method you would like.


Once you have all your ingredients prepped, add your cauliflower, parsley, garlic, and oil to a large bowl. Mix well until everything is distributed evenly.



The steps to this recipe are quite simple. Once everything is cut up and mixed together, just lay it out on a baking sheet covered with parchment paper and sprinkle with salt to taste. Now time to roast!


Once the cauliflower is soft when poked with a fork and browning on the top, take it out of the oven and sprinkle with parmesan. Place it back in the oven just for a few minutes to melt the cheese.


Top with more fresh parsley for garnish and enjoy right out of the oven.

Ingredients

1 head of cauliflower or 2 - 1 lb bags of frozen

2-3 cloves of garlic pressed/minced or 1 tsp garlic powder

2 Tbsp extra virgin olive oil or avocado oil

1/4 cup chopped fresh parsley or 2 Tbsp dried parsley

Salt to taste

1/4 cup shredded parmesan

Directions

  1. Preheat your oven to 400°.

  2. Cover a baking sheet with parchment paper.

  3. Start by washing your cauliflower and drying it. Then cut out the stem and discard. Then break up and cut the top into bit sizes florets. Add the cut cauliflower to a large bowl. Or add your two frozen bags to a large bowl.

  4. Measure then finely chop your fresh parsley. Or measure out your dry. Add to the large bowl with cauliflower.

  5. Next using a garlic press, press your cloves or mince with a knife. Or measure out your dried and add to the large bowl.

  6. Lastly in the large bowl with the cauliflower, parsley, and garlic, add your oil and stir well. Make sure your garlic and parsley isn't all in one spot.

  7. Pour the cauliflower onto your parchment paper covered baking sheet and lay out in a single layer. You don't want your cauliflower too packed, otherwise it won't crisp up as well.

  8. Sprinkle with salt to taste.

  9. Bake for about 30 minutes or until it is soft when poked with a fork and starting to brown on the tops.

  10. Take it out of the oven but leave the heat on. Push the cauliflower together in the middle (still keeping a single layer), then sprinkle with parmesan and place it back in the oven for about 2-3 minutes, just until the cheese is melted.

  11. Remove from the oven and sprinkle on more fresh chopped parsley for garnish if desired and enjoy!
