No Bake Monster Cookie Energy Bites (Gluten Free and Low FODMAP options)

These no bake energy bites have a few added healthy ingredients which add vitamins, minerals, fiber, and even protein, making them the perfect little snack to get you through the day. They are perfectly sweet and salty, and are so simple to make. There are gluten free and low FODMAP options. A great recipe for kids and adults!


Start by measuring out all your ingredients. I like to use ground chia seed and flax seed in this recipe in order to keep these energy bites from having too much chewy texture. I also use quick oats for this reason as well.



There are three options for sweetener in this recipe. I typically choose real maple syrup because it is extra sweet, this time I used brown rice syrup which made the bites turn out less sweet. Both of these syrups are low FODMAP options. If you are not concerned about FODMAP, you can simply use honey.



Start by adding all the dry ingredients, stir. Then add wet, again stir. Lastly add chocolate and fold in.



Scoop and roll into a ball. Then repeat the process until all batter is used. Place the bites on a plate and cover, then refrigerate.



Store in the fridge for about a week and enjoy your tasty snack.



 

Ingredients

[Makes about 15-20 bites]

1 cup quick oats (use gluten free oats if needed)

1/2 cup creamy peanut butter (I like to use the kind with nothing but peanuts and salt)

1/3 cup real maple syrup or brown rice syrup* for your low FODMAP options, or honey for a non low FODMAP option

2 Tbsp hemp hearts

1 Tbsp ground chia (you can use regular, but texture is better)

1 Tbsp ground flax (non ground is not digestible so make sure this one is ground)

1 tsp vanilla

2 Tbsp mini chocolate chips (I use dairy free)

2 Tbsp mini M&Ms (or more chocolate chips)


*Brown rice syrup is less sweet


Directions

  1. Measure out all your dry ingredients and add them to a large bowl, except chocolate chips and M&Ms. Mix well.

  2. Now add your wet ingredients and mix and fold in with a spatula until everything is mixed together and you have a sticky batter.

  3. Next add the chocolate chips and M&Ms and fold them in.

  4. Now using a small cookie scoop or tablespoon, scoop out balls and roll in your hands to make them smooth and set them on a plate. Repeat this until the batter is gone.

  5. Cover the bites with plastic wrap and put them in the fridge for about an hour, then enjoy you tasty but health packed treat.

  6. Keep in the fridge for about one week.
