This mango lime sauce has a bold bright flavor and super simple to make. It pairs perfectly with yogurt, overnight oats, and works great as a cake topping or filling! All you will need is 4 simple ingredients and a blender or immersion blender.
You will need: two ripe mangos, lime juice, water, and cane sugar (or regular sugar).
Dice your mango and add all your ingredients to a small saucepan. Bring to a boil then reduce to a simmer and cook for about 10-15 minutes to cook down the mango. You want your mango to look about the texture of the second image below.
Let it cool for about 10 minutes, then use an immersion blender or individual serving blender and blend until smooth.
Save in an airtight container for about one week.
It tastes delicious with vanilla yogurt for a tasty yogurt parfait, or added to overnight oats as your sweetener.

Ingredients
2 ripe mangos or 2 cups diced
1 Tbsp lime juice
3 Tbsp cane sugar or regular sugar
1/3 cup water
Directions
Start by washing your mangos then dicing them up. The smaller you dice them, the faster it will cook down. Add to a small saucepan.
Next juice your lime and add one tablespoon, you can also use concentrate. Add this to the saucepan as well.
Then add your water.
Lastly add your cane sugar. Regular sugar works just as well.
Turn your burner on high and bring to a boil. Be sure to mix in the sugar.
Once it reaches a boil, reduce the heat to medium or to a simmer and cook for about 10-15 minutes. I like to try to break up the pieces as it cooks and make sure to occasionally stir so that it doesn't burn.
Once the mango has cooked down and there are only a few chunks left (see photo above for reference), take it off the heat and let it cool for about 10 minutes.
Once it is cooled, you can either use and immersion blender or add the contents to a individual serving sized blender and blend until totally smooth.
Store in the fridge for about one week. It is great on top of bundt cakes recipe coming soon, yogurt parfaits, overnight oats, and more!
