This Dr. Seuss Green Eggs and Ham inspired egg bake is a fun recipe for kids and adults. It is naturally colored with nutritious spinach that you can't even taste, making it a great way to sneak greens into your diet. Make it dairy free or regular, choose bacon or diced ham, and add cheese to make it your own.
Start by cooking up your bacon or dice your ham. Then dice your bread. Set these aside.
For a dairy free egg bake you can use canned coconut milk or greek style dairy free plain yogurt.
A blender is needed for this recipe, preferably a high powered one to blend the spinach thoroughly. Add the eggs, milk, cottage cheese or dairy free option, salt and pepper and spinach to your blender. Blend until smooth.
In a sprayed 8x8 bar pan, add your bread, then ham or bacon, and lastly the egg mixture. Now time to bake!

Recipe 6 slices of whole wheat bread cubed 6 eggs 1/2 cup cottage cheese OR plain greek yogurt 1 cup milk 2 large handfuls of spinach (doesn't have to be exact) 1/2 cup diced ham OR about 6 sliced of bacon cooked and crumbled 1 tsp salt
1/4 tsp pepper Spray oil for pan

6 slices of whole wheat bread cubed 6 eggs 1/2 cup canned coconut milk unsweetened OR 1/2 cup dairy free plain and unsweetened greek style yogurt (I used Kite Hill) 1 cup your choice of plain dairy free milk 2 large handfuls of spinach (doesn't have to be exact) 1/2 cup diced ham OR about 6 sliced of bacon cooked and crumbled 1 tsp salt
1/4 tsp pepper Spray oil for pan

1/2 cup of cheese or dairy free cheese
Directions
If you are using bacon cut up your slices into small pieces and add them to a pan, cook on medium heat until crispy. Remove the pieces from the grease and put them on a plate covered with paper towels. Set them aside to cool.
Preheat your oven to 350°.
Spray an 8x8 pan with oil.
Next cube your bread into about 1x1 inch squares. Then add them to your sprayed pan.
Next sprinkle your ham or bacon pieces over the bread along with cheese if you are adding it.
Add your eggs, milk, cottage cheese or dairy free option, spinach, salt and pepper into a high powered blender and blend until smooth.
Pour you egg mixture over the bread and meat. Make sure to press in all the dry bread pieces.
Bake for 50 minutes to 1 hour or until the center is fully cooked. Check it by sticking a knife in the center to see if it comes out clean.
Remove from the oven and let it stand about 10 minutes, then serve. Eat up within about one week.
