Cucumber Melon Mint Smoothie

This smoothie is a fun spin on the mojito and is packed with some good fiber and nutrients. Fresh mint can taste slightly green, so keep this in mind, but it pairs well with the honeydew melon and cucumber to create a very refreshing drink. Lime and pineapple are also used in this smoothie to add some sweetness and tart flavors.



Add all the fruit and vegetables, then add mint, and lastly pour over the juice and lime.



Blend, garnish and enjoy!



 

Ingredients

[Serves 1-2]

About 5-10 fresh mint leaves (I used 10, but use less if you don't like the "green" taste)

1/2 cup diced cucumber (peeling is optional)

1/2 cup frozen pineapple chunks

1/2 cup frozen or fresh honeydew melon chunks

1/2 lime juiced or 2 Tbsp concentrate

6 ounces pineapple juice or coconut water (I used pineapple juice because I like tart smoothies)


Directions

  1. If planning to use frozen melon, cut up and freeze a few hours to a day in advance.

  2. Peel and cut up your cucumber, and honeydew melon if you are using fresh. Juice your lime if using fresh.

  3. Measure out your frozen fruits and liquid.

  4. Add your cucumber, melon, and pineapple to the blender.

  5. Rinse your mint leaves and add them on top of the fruit and veggies.

  6. Now pour over your lime and pineapple juice.

  7. Blend until totally smooth and garnish with more mint if desired. Enjoy your refreshing drink!
