This smoothie is so creamy and delicious with a fun combination of sweet and tart flavors. It is totally dairy free, low FODMAP, high in vitamin C to boost your immune system, and digestive enzymes and collagen which are good for your gut! You will only need a few ingredients that can easily be customized to make this perfect snack, breakfast, or dessert!


Start by peeling and dicing your papaya. Lay out your pieces on a parchment paper covered baking sheet. Place it in the freezer for about 2 hours or until they are fully frozen.



For this recipe you will need fresh lemon juice, not concentrate, for the best flavor. I tried it with concentrate and the flavor was very underwhelming. You will need about two small lemons or one large one. Juice them, then strain out the seeds.



Measure out your heaping cup of papaya, it doesn't have to be exact, and add it and your ice to your blender. Then add your dairy free yogurt of choice, I used vanilla flavored for sweetness. Then add your lemon juice and dairy free milk of choice. And lastly, collagen.



Blend until smooth, then garnish with a lemon and fun straw!



 

Ingredients

[Serves 1]

1 heaping cup of frozen papaya (you can also use frozen mango or pineapple, papaya is the most mild flavor and provides digestive enzymes)

2 small lemons juiced (be sure to use fresh, not concentrate)

1/2 cup dairy free milk of your choice (I used vanilla soy milk)

1/4 cup of your favorite dairy free vanilla yogurt (I like to use Kite Hill vanilla or Silk almond vanilla)

1 scoop (10 gram serving) of collagen

3-4 ice cubes


Optional Additions

Spinach--greens for vitamins and minerals

Chia seeds--omegas and fiber


Directions

  1. Start by cutting up your ripe papaya into small pieces. Line a baking sheet with parchment paper and lay out your papaya chunks so they are not touching. Place in the freezer for about 2 hours or until they are frozen.

  2. Now juice your lemons and strain out any seeds, set aside.

  3. Once the papaya is frozen, measure out your heaping cup and add it to your blender along with about 3-4 ice cubes.

  4. Then add the yogurt, followed by milk and lemon juice.

  5. Lastly, make sure to add the collagen after the liquid to prevent it from sticking to the sides of the blender.

  6. Blend until totally smooth.

  7. Garnish with a lemon slice, then sip and enjoy!
