Creamy Cilantro Jalapeno Salad Dressing (Dairy Free and Low FODMAP)

This dressing is oh so creamy, flavorful, and loaded with some healthy fats, vitamins and minerals! The creaminess comes from the avocado, flavor from cilantro and lime, and just a touch of spice comes from jalapeno. It's the perfect dressing for coleslaw especially with fish or shrimp tacos!


Start with prepping all your ingredients, using all fresh will produce the best results but there are alternatives for some.



Blend all the ingredients in the food processor until there are not cilantro stems or jalapeno chunks, you may have to scrape the sides.



Add dressing to cabbage or your favorite salad green. It tastes great with fish or shrimp tacos or just as a side salad.



 

Ingredients

1 avocado

2 Tbsp avocado oil or canola oil

Juice of 2 limes or 4 Tbsp lime concentrate

1 cup fresh cilantro stems and all

1 Tbsp honey, agave or natural maple syrup (low FODMAP option)

1/2 tsp salt

1 large jalapeno seeded or 1 Tbsp canned diced jalapenos drained


Directions

  1. Start by removing the avocado pit and scoop it out of the skin then add it to your food processor.

  2. Then take the seeds out of the jalapeno and chop into about 4 pieces. Or measure out one tablespoon of canned. Add to your food processor.

  3. Then wash the cilantro, pat dry, and measure out one cup. Add it to the food processor as well.

  4. Next juice the limes and then add the juice and the rest of the ingredients.

  5. Blend everything together until smooth, you will need to scrape the sides and bottom a few times to get all the chunks blended.

  6. Add to coleslaw, salad, sandwiches, or even use as a dip! My favorite way to eat it is on cabbage added to tacos.
