Sushi has grown in popularity the past few years, but we all know it can get quite pricey. This recipe is a fun way to have the sushi flavors you love all in a bowl made right at home. This recipe is simple and requires only a little knife skills. Toppings and chopsticks are optional.
Start by chopping up the cucumber into matchsticks, slice the crab into bite size chunks, and dice the avocados.
Assemble your bowl starting with rice, then add the cucumber, avocado and crab.
Toppings are optional but definitely add a lot to this dish. I love cutting up bite size pieces of sushi seaweed, adding sesame seeds, and spicy mayo. You can also add soy sauce, wasabi or other sauces.
Make it your own and add the toppings you like.
Ingredients
[Serves about 6]
Rice
2 cups sushi or jasmine rice cooked up
1/4 cup rice vinegar
1/4 tsp salt
1 1/2 Tbsp sugar
1 english cucumber cut into matchsticks
2 avocados diced
1-2 8 ounce package of imitation crab cut into bite size pieces (I like Louis Kemp brand because it is gluten free!)
Optional
Sesame seeds
Cut up pieces of sushi seaweed
Soy sauce
Spicy mayo
Wasabi
Yum Yum sauce
Directions
Start by making the rice. I like to use my Instant Pot. I do a 1:1 ratio of water to rice, close the valve and use the steam function on high for 4 minutes. Then let it sit 10 minutes after the 4 minutes is up without touching it. Then open the vent and fluff the rice with the rice paddle.
While the rice cooks, add the rice vinegar, sugar, and salt to a microwave safe bowl and microwave for 30 seconds. Take it out and stir. Then put it back in for 20 second intervals and repeat the process until the sugar and salt are dissolved.
When the rice is done, pour over the vinegar mixture and stir it into the rice until it is all coated.
Now cut up your other ingredients. Dice the avocados, cut the crab into bite size pieces, and slice the cucumber into matchsitcks by cutting into thin rounds then lay them down flat and cut them into thin pieces (see photo above).
Put the warm rice in a bowl then add the avocado, crab, and cucumber, theses do not need to be warmed. Then add the toppings you would like and enjoy!
